Summary

Description

In the 1920s, key vitamins were identified that contribute to human health. FDA remained, at least until the advent of WWII, extremely skeptical, not of the vitamins themselves, but of the premature claims made for them. FDA developed a rational program for food enrichment upheld by the courts. Suffice it to say that FDA’s enrichment policies did not allow fortified donuts – or beer!!
