The Chaplin School of Hospitality & Tourism Management at Florida International University, located at the Biscayne Bay Campus in North Miami, Florida in the United States is one of the University's 26 schools and colleges.[2] The University was chartered in 1965 and opened in 1972.[2]

In the fall of 1972, FIU and the school opened with upper-level and graduate programs, where later in 1978, the school’s name was changed to Hospitality Management. The Summer of 1989, the then School of Hospitality Management relocated from the University Park campus - now known as Modesto Maidique Campus (MMC) - to the North Miami Campus - now known as Biscayne Bay Campus BBC). In 2011, the school was renamed the Chaplin School of Hospitality & Tourism Management in honor of the Chaplin family. The naming recognizes the commitment of Southern Glazer’s Wine & Spirits and the Chaplin family as passionate supporters of FIU hospitality and tourism management education. In doing so, the goal was to continue providing cutting-edge management education for students pursuing careers in the hospitality and tourism industries.

Chaplin School of Hospitality Deanship History[edit]

In early 1971, the then Associate Dean of Cornell Hospitality program, Gerry Lattin was hired to lead the School of Hotel, Food and Travel Services at the new and not yet built, first state university in Miami, Florida – Florida International University. This decision would impact the future of the Chaplin School for years to come. In the fall of 1971, Dean Gerry Lattin moved to Miami and began designing a curriculum, hiring faculty and staff and recruiting students. This effort was based on two fundamental principles: industry-oriented faculty with executive experience and required academic credentials, and a scope that would be local, statewide and international.

1972:  

In early 1972, Anthony G. Marshall was hired as Assistant Dean but later would be promoted to Associate Dean and Dean of the school.  

1982:

When Dean Gerry Lattin retired in 1982, Tony Marshall was appointed Dean of the School of Hospitality Management and he immediately appointed Rocco M. Angelo as Associate Dean.

1999:

In July 1999, Joseph J. West was appointed the school’s third Dean, bringing a new chapter in the growth and development of the school.

2010:

In 2010, Michael Hampton was appointed the fourth dean of FIU's School of Hospitality & Tourism Management, creating new sources of growth and development for the School with the expansion of the Marriott Tianjin China program, the development of the real estate finance program and many other projects.

2020:  

In February 2020, Michael Cheng was appointed the fifth dean of the FIU Chaplin School of Hospitality & Tourism Management, where he still holds this position presently.

Admissions[edit]

With world-renowned faculty, corporate partnerships, and opportunities for real-world experience, the Chaplin School is sure to prepare you for whatever path you decide to take in the world of hospitality. To start your journey, undergraduate and graduate applicants are required to apply for admission to the University and to follow admission procedures stated on its prospective Admissions website. To be approved for entrance into The Chaplin School, applicants must first be eligible for admission into the University.

Programming on Demand[edit]

PODs (Programming on Demand) are one credit, intensive courses generally offered for 15 hours either over a weekend or online. Three one-credit PODS equal one three-credit elective. PODs offer students hands-on experience in the hospitality and tourism industry and have provided a vehicle to teach soft skills and cutting-edge ideas.

Study Abroad[edit]

At FIU, providing our students with a Worlds Ahead experience while preparing them for the global market is a top priority. As such, numerous FIU Panthers partake in other educational experiences abroad that may be facilitated by other offices/departments on campus.  

FIU Faculty- Led Programs

FIU Faculty-Led Education Abroad programs provide students with the opportunity to participate in short term programs abroad with other FIU students led by an FIU faculty member. As a participant in the program, you enroll at FIU and attend classes abroad with an FIU professor and FIU students. The programs vary in length—anywhere from 10 days to 6 weeks—affording you a short-term glimpse of the world, while providing you with a global, Worlds Ahead academic experience. Most programs are offered during the summer and in a variety of fields and destinations. There are more than 25 FIU Education Abroad programs to choose from and you can sign up for one of them as early as your freshman year at FIU.

International Student Exchange

With the International Student Exchange (ISE), you can attend any one of our partner schools throughout the world. The ISE offers you true immersion, since you’ll be living and studying in your host country for the Fall or Spring semester, or both! The ISE is open to all majors and you’ll need to have a 3.0 GPA in order to be eligible. What’s great about the ISE is that you pay your FIU tuition, which means any scholarships or financial aid that you receive can go towards your study abroad experience. A student can take part in the ISE program depending on their academic requirements.

SOBEWFF -

The Food Network South Beach Wine & Food Festival presented by Capital One (SOBEWFF®) is widely recognized as America’s most prestigious gourmet gathering showcasing the talents of the world-renowned chefs, culinary personalities and wine and spirit producers. FIU is the only university whose students help plan and execute this prestigious national event and the Chaplin School is the only hospitality program in the country that benefits from the Festival.

 

Each year more than 1,500 students get real-world hands-on experience during the four-day destination event. To date, the festival has raised more than $37 million in support of its mission to EAT. DRINK. EDUCATE. with the Chaplin School of Hospitality & Tourism Management at Florida International University.

The school is located on the Biscayne Bay Campus, which is about 200 acres (809,000 m2).

Carnival Student Center

Florida International University (FIU), Carnival Corporation & plc and Carnival Cruise Lines marked the dedication of the new Carnival Student Center at FIU's School of Hospitality and Tourism Management located at the university's Biscayne Bay Campus. Located adjacent to the campus' bayside terrace, the modern facility encompasses more than 2,600 square feet and has been completely renovated and repurposed to create an attractive and inviting gathering place for students. With an advising center, reading room, computer workstations and fully equipped conference rooms, a variety of groups and organizations, from students to industry executives scouting prospective interns and employees, can utilize the new multi-functional space.

The Carnival Student Center was made possible by a gift to FIU's School of Hospitality and Tourism Management from Miami-based Carnival Corporation & plc and its flagship brand Carnival Lines.

Bacardi Room

The emblazoned walls can tell the story of a spirit’s ingredients, from the unique strain of yeast that Don Facundo Bacardí Massó found growing in the sugarcane fields outside Santiago de Cuba, to responsible sourcing of sugarcane-derived products and packaging materials. All core classes are held in this space, creating an emotional connection and brand loyalty between Bacardi brands and Chaplin’s future on-premise professionals.

Building meaningful relationships with organizations in the industry has been an integral part of the Chaplin School of Hospitality & Tourism Management's successful existence. Our partners come from all over the world and have been valuable in efforts to expand funding opportunities to students, serve the local community, provide employment experiences, and deliver the resources needed to advance the quality of education and service provided to students and alumni. Our largest partnership is with the Chaplin family, who the school is named after. The Chaplin's are co-owners of Southern Glazer’s Wine & Spirits, one of the largest, privately-held alcohol beverage distributors in the world. The Southern Wine & Spirits Beverage Management Center is one of the school’s focal points and houses, the Bacardi Center of Excellence and its Bacardi Center of Excellence classroom, the Wine Spectator Restaurant Management Laboratory, the Badia Spices Food Production Laboratory and the Quirch Foods Hub.  


Bacardi Center of Excellence - The Bacardi Center of Excellence (BCE) is a dynamic educational partnership focused on developing learners of beverage management, fine spirits, industry innovation, sustainability and entrepreneurship. BCE brings academia and industry together in a pioneering partnership experience at the Chaplin School.

Future Proof - Future Proof is a collaborative learning platform and bar training program created by Bacardi USA, the Chaplin School of Hospitality & Tourism Management and renowned bartenders. The program provides foundational knowledge and techniques to excel as a hospitality professional.

The Future Proof platform brings global experts on campus and online to share cutting-edge techniques, foster creative approaches to mixology and explore best practices in the beverage industry.

The Bartenders Guild - A student-run organization that shares a passion, curiosity, and camaraderie for the art and concepts of mixology, craft cocktails, and fine spirits. The Bartenders Guild is a pillar of the Bacardi Center of Excellence at FIU's Chaplin School of Hospitality & Tourism Management. Award-winners of the "people's choice cocktail" of the SOBEWFF® Art of Tiki Showdown presented by BACARDÍ Rums and Patrón Tequila.

The Wine Guild - The Wine Guild is a student-run organization that offers students opportunities to learn about wine through our various industry partnerships. The Wine Guild is continuing its partnership with Rioja and starting new partnerships, like the Wines of Argentina, to keep expanding student knowledge and connections in the world of wine.  

The Coffee Guild - The Coffee Guild is the newest addition to the Bacardi Center of Excellence. It’s a group for students who are interested in learning more about the world of coffee, while networking, establishing connections, and participating in FIU events.

Wine Spectator Restaurant Management Laboratory- This fully operational restaurant serves as an on-site laboratory in which students can get the experience of operating a restaurant without having to leave campus. The Advanced Food Laboratory and the Mel Dick Wine Tower provide students with dedicated spaces to practice their skills in the areas of food and beverage management. Technology is integrated seamlessly through the use of cutting-edge tools that provide guests and students with an experience that can be found in highly rated commercial restaurants.

Badia Spices Food Production Laboratory - With more experience, students are able to move on to the Badia Spices Food Production Laboratory, which services the Wine Spectator Restaurant Management Laboratory. Fully wired, this advanced prep facility utilizes tablet technology in its operations and gives students hands-on management experiences with dining events, hosted by the Chaplin School. The space also provides state-of-the-art instructional technology in over 2,200 square feet of space. Students receive hands-on learning in food production and innovation with access to a specialized area where they can develop, test and taste new product ideas and solutions for the industry.

Quirch Foods Hub - The Quirch Foods Hub is a shared space within the school’s food production laboratories. The Hub is located as an offset space in between the Culinary Demo Lab and the Badia Spices Food Production Lab and provides a comfortable environment for students to be able to interact with each other, sit down for a meal they prepared themselves, or just hang out in between classes. Quirch Foods also established the Quirch Foods First-Generation Scholarship to support undergraduate students at the Chaplin School who demonstrate exceptional academic merit and passion for the food and beverage industry. The strategic partnership between FIU and Quirch Foods also will provide students with opportunities to work on innovative projects with Quirch Foods and participate in management-level internship and mentoring programs.
