Liquor (/ˈlɪkər/LIK-ər) is an alcoholic drink produced by the distillation of grains, fruits, vegetables, or sugar that have already gone through alcoholic fermentation. Other terms for liquor include: spirit, distilled beverage, booze, spirituous liquor or hard liquor. The distillation process concentrates the liquid to increase its alcohol by volume. As liquors contain significantly more alcohol (ethanol) than other alcoholic drinks, they are considered "harder." In North America, the term hard liquor is sometimes used to distinguish distilled alcoholic drinks from non-distilled ones, whereas the term spirits is more commonly used in the UK. Some examples of liquors include vodka, rum, gin, and tequila. Liquors are often aged in barrels, such as for the production of brandy and whiskey, or are infused with flavorings to form flavored liquors, such as absinthe.
While the word liquor ordinarily refers to distilled alcoholic spirits rather than beverages produced by fermentation alone, it can sometimes be used more broadly to refer to any alcoholic beverage (or even non-alcoholic products of distillation or various other liquids). (Full article...)

Dale DeGroff (born September 21, 1948, Rhode Island), also known as "the King of Cocktails" or "King Cocktail", is an American bartender and author. The New York Times in 2015 called DeGroff "one of the world's foremost cocktail experts", and wrote that his book The Craft of the Cocktail is considered an essential bartending reference. From 1987 to 1999 DeGroff rose to prominence as the original chief bartender in the Rainbow Room at Rockefeller Center in New York City, where his then-unusual emphasis on classic cocktail recipes and high-quality ingredients led to substantial acclaim and emulation by many other bars in New York City and beyond, and helped influence the creation of the craft cocktail movement.

The negroni is a cocktail, made of equal parts gin, vermouth rosso (red, semi-sweet), and Campari, generally served on the rocks, and commonly garnished with an orange slice or orange peel. It is considered an apéritif.
The drink has been documented in Italy since the late 1940s, and became popular in the 1950s, but the origin is uncertain, and early recipes differ somewhat from the modern standard. The basic recipe – an equal-parts cocktail of these three ingredients – is first recorded in French cocktail books of the late 1920s, alongside many similar drinks; in Italy a long drink of equal parts vermouth and Campari (but no gin), topped with soda and served over ice, has existed since the 1800s under the names Milano–Torino or Americano. Traditional distillation of tsikoudia Tsikoudia (Greek: τσικουδιά, romanized: tsikoudiá, literally "terebinth") is an alcoholic beverage, a fragrant, grape-based pomace brandy of Cretan origin that contains 40% to 65% alcohol by volume. Tsikoudia is made by distilling of pomace, what remains of grapes pressed in winemaking. In the eastern part of Crete, tsikoudia is often informally called raki (Greek: ρακή, romanized: rakí), a name originating from the Ottoman 'raki', derived from the 17th-century Arabic 'arak', meaning 'distilled'.
The pomace ferments for about six weeks in a tightly sealed barrel, and is then distilled. It is similar to tsipouro from mainland Greece, and is part of a family of Mediterranean grape-based distilled spirits, including Ottoman rakı, Albanian: rakia, Spanish: orujo, Italian: grappa, French: marc, Georgian: chacha, Portuguese: bagaceira, Bulgarian: ракия, romanized: rakiya, Macedonian: ракија, romanized: rakija, Serbo-Croatian: rakija / ракија (in Istria: grappa), Romanian: tescovină, Hungarian: törköly. However, unlike the above spirits which are typically double-distilled and often include additional spices such as anise, tsikoudia undergoes a single distillation process. Poitín (Irish pronunciation:[ˈpˠɛtʲiːnʲ]), anglicized as poteen (/pəˈt(ʃ)iːn,pɒˈtiːn/) or potcheen, is a traditional Irishdistilled beverage (40–90% ABV). Former common names for Poitín were "Irish moonshine" and "mountain dew". It was traditionally distilled in a small pot still and the term is a diminutive of the Irish word pota, meaning "pot". The Irish word for a hangover is póit. In accordance with the Irish Poteen/Irish Poitín technical file, it can only be made from cereals, grain, whey, sugar beet, molasses and potatoes. Pálinka is a traditional fruit spirit (or fruit brandy) with origins in the medieval Kingdom of Hungary, known under several names. Protected as a geographical indication of the European Union, only fruit spirits mashed, distilled, matured and bottled in Hungary and similar apricot spirits from four provinces of Austria can be called "pálinka", while "Tótpálinka" refers to wheat-derived beverages. Törkölypálinka, a different product in the legal sense, is a similarly protected pomace spirit that is commonly included with pálinka. While pálinka may be made of any locally grown fruit, the most common ones are plums, apricots, apples, pears, and cherries.
The whiskey-based Manhattan is one of five cocktails named for a New York City borough. It is closely related to the Brooklyn cocktail, which uses dry vermouth and Maraschino liqueur in place of the Manhattan's sweet vermouth, and Amer Picon in place of the Manhattan's angostura bitters. Baijiu (Chinese: 白酒; pinyin: báijiǔ; lit. 'white (clear) liquor'), or shaojiu (烧酒/燒酒), is a colorless Chinese liquor typically coming in between 35% and 60% alcohol by volume (ABV). Each type of baijiu uses its own type of qū for fermentation to create a distinct and characteristic flavor profile.
Baijiu is a clear liquid usually distilled from fermented sorghum, although other grains may be used; some southeastern Chinese styles may employ rice or glutinous rice, while other Chinese varieties may use wheat, barley, millet, or Job's tears (Chinese: 薏苡; pinyin: yìyǐ) in their mash bills. The two most popular types of feni are cashew feni and coconut feni. Depending on the ingredients; however, other varieties and newer blends are also sold by distilleries. The small-batch distillation of feni has a fundamental effect on its final character, which still retains some of the delicate aromatics, congeners, and flavour elements of the juice from which it is produced.
The word "feni" is derived from the Sanskrit word फेनphena, in Konkaniफेणfenn (froth); thought to come from the bubbles that form when the liquor is shaken inside a bottle or poured into a glass. It is generally accepted that coconut feni was produced before it, and feni followed the same process until distillation was introduced by Europeans. Coconut palms are abundant along the western coastline of the Konkan region of India, whereas the cashew tree was an exotic species of crops, imported by the Portuguese in Goa and Bombay, from what was colonial Brazil in south America. Tsipouro
Tsipouro (Greek: τσίπουρο, romanized: tsípouro) is an un-aged brandy from Greece and in particular Thessaly, Epirus, Macedonia. Tsipouro is a strong distilled spirit containing 40–45% alcohol by volume and is produced from either the pomace (the residue of the winepress) or from the wine after the grapes and juice have been separated. Tsipouro is typically produced in two varieties: anise-flavored, which is the default, and pure, which contains no anise and is specifically labeled as 'without anise.' While tsipouro is usually not aged in barrels, barrel-aged versions are also available. It is similar to tsikoudia produced on the island of Crete, but unlike tsikoudia, which is single-distilled and contains no additional flavorings, tsipouro is typically double-distilled and frequently includes spices, primarily anise. A lemon drop is a vodka-based cocktail that has a lemony, sweet and sour flavor, prepared using vodka, triple sec, and fresh lemon juice. It has been described as a variant of, or as "a take on", the vodka martini, but is in fact closer to a white lady variant. It is typically prepared and served straight up – chilled with ice and strained.
The drink was invented sometime in the 1970s by Norman Jay Hobday, the founder and proprietor of Henry Africa's bar in San Francisco, California. Variations of the drink exist, such as blueberry and raspberry lemon drops, and some recipes that call for simple syrup. Peruvian pisco sour
A pisco sour is an alcoholic cocktail of Peruvian origin that is traditional to Peruvian cuisine and Chilean cuisine. The drink's name comes from pisco, which is its base liquor, and the cocktail term sour, about sour citrus juice and sweetener components. The Peruvian pisco sour uses Peruvian pisco as the base liquor and adds freshly squeezed lime juice, simple syrup, ice, egg white, and Angostura bitters. The Chilean version is similar, but uses Chilean pisco and Pica lime, and excludes the bitters and egg white. Other variants of the cocktail include those created with fruits like pineapple or plants such as coca leaves.
Although the preparation of pisco-based mixed beverages possibly dates back to the 1700s, historians and drink experts agree that the cocktail as it is known today was invented in the early 1920s in Lima, the capital of Peru, by the American bartenderVictor Vaughen Morris. Morris left the United States in 1903 to work in Cerro de Pasco, a city in central Peru. In 1916, he opened Morris' Bar in Lima, and his saloon quickly became a popular spot for the Peruvian upper class and English-speaking foreigners. The oldest known mentions of the pisco sour are found in newspaper and magazine advertisements, dating to the early 1920s, for Morris and his bar published in Peru and Chile. The pisco sour underwent several changes until Mario Bruiget, a Peruvian bartender working at Morris' Bar, created the modern Peruvian recipe for the cocktail in the latter part of the 1920s by adding Angostura bitters and egg whites to the mix. Mojito (/moʊˈhiːtoʊ/; Spanish:[moˈxito]) is a traditional Cuban punch. The cocktail often consists of five ingredients: white rum, sugar (traditionally sugar cane juice), lime juice, soda water, and mint. Its combination of sweetness, citrus, and herbaceous mint flavors is intended to complement the rum, and has made the mojito a popular summer drink.
When preparing a mojito, fresh lime juice is added to sugar (or to simple syrup) and mint leaves. The mixture is then gently mashed with a muddler. The mint leaves should only be bruised to release the essential oils and should not be shredded. Then rum is added and the mixture is briefly stirred to dissolve the sugar and to lift the mint leaves up from the bottom for better presentation. The word horilka may also be used in a generic sense in the Ukrainian language to mean vodka or other strong spirits and etymologically is similar to the Ukrainian word for 'to burn' - hority. Home-distilled horilka, moonshine, is called samohon (Ukrainian: самогон, lit. 'self-distillated' or 'self-run' - almost identical to the Russian and Polishsamogon). Horilka is usually distilled from grain (usually wheat or rye), though it can, less commonly, also be distilled from potatoes, honey, sugar beets etc. One type of horilka, called pertsivka (Ukrainian: перцівка), is horilka with chili peppers. French 75 is a cocktail made from gin, champagne, lemon juice, and sugar. It is also called a 75 Cocktail, or in French simply a Soixante Quinze (Seventy Five).
Freeze distillation is a misnomer, because it is not distillation but rather a process of enriching a solution by partially freezing it and removing frozen material that is poorer in the dissolved material than is the liquid portion left behind. Such enrichment parallels enrichment by true distillation, where the evaporated and re-condensed portion is richer than the liquid portion left behind.
Ethanol and liquid water are completely miscible, but ethanol is practically insoluble in water ice. That means almost pure water ice can be precipitated from a lean ethanol-water mixture by cooling it sufficiently. The precipitation of water ice from the mixture enriches ethanol in the remaining liquid phase. The two phases can then be separated by filtration or decanting. The temperature at which water ice starts to precipitate depends on the ethanol concentration. Consequently, at a given temperature and ethanol concentration, the freezing process will reach an equilibrium at a specific ratio of water ice and enriched ethanol solution with a specific ethanol concentration. The temperatures and mixing ratios of these phase equilibria can be read from the phase diagram of ethanol and water. The Gypsy Restaurant and Velvet Lounge was a restaurant and nightclub established in 1947 and located along Northwest 21st Avenue in the Northwest District neighborhood of Portland, Oregon, in the United States. Popular with young adults, the restaurant was known for serving fishbowl alcoholic beverages, for its 1950s furnishings, and for hosting karaoke, trivia competitions, and goldfish racing tournaments. The restaurant is said to have influenced local alcohol policies; noise complaints and signs of drunken behavior by patrons made the business a target for curfews and closure.
