Draft:Lazy Cow Bakery

From Wikipedia, the free encyclopedia

Lazy Cow Bakery is a vegan, socialist cooperative located in Seattle, Washington in the US. The bakery was founded in 2020 in the basement of Lara de la Rosa.[1] It also houses the mutual aid group and music venue, La Casa del Xoloitzcuintle.

In 2022, the previous property owners sold the cluster of buildings on the corner of Fremont Avenue North and North 35th Street for $17.4 million to Blueprint Capital, a firm that specializes in construction financing and redevelopment. [2] In July of 2022, Blueprint filed for demolition permits, including the building that houses the cafe. Lazy Cow will not be compensated for the demolition of their space.
