Millow is a Swedish startup that produces minimally processed meat alternatives using mycelium and oats.[1][2]. The company utilizes the Mycelium Utilized Texture Engineering (MUTE) technique, based on the research of Professor Mohammad Taherzadeh at the University of Borås [1][2][3].

Millow's fermentation process is designed to be energy and water-efficient, contributing to reduced CO2 emissions compared to traditional meat production methods [1][4]. The company's products aim to replicate the texture and taste of meat without the use of artificial additives [1][2].
