re. Mozarella with one z[edit]

I do see use e.g. [1] but not any indication it's more commonly used than with two zs which is also used ([2]) definitely not to the point where we should make a point of changing from how the cited source uses things (which is with two zs), so will be changing it back as part of additional trimming of the footnotes.
