The capitalisation "Le Plus doux chemin" looks rather odd to me, but is how the title is rendered in Jean-Michel Nectoux's authoritative book on Fauré, both in the original French edition and the English translation by Roger Nichols. It is given in the form I'd expect to see – "Le plus doux chemin" – in Barrie Jones's Gabriel Fauré: A Life in Letters, in Graham Johnson's notes in the Hyperion intégrale, and in Grove.
