Shahaf Shabtay Shahaf Shabtay (born 1975) is a French Asian Fusion chef and restaurateur. His restaurant has been awarded 1 BIB Michelin stars at the years: 2009, 2010, 2011, 2012, 2013, 2014, and 2015. Shabtay is a dynamic chef who travels the world and shares his culinary experiences with his dinners.

Shabtay brings with him a fresh and modern approach for cooking, as he travels around Asia and learns Asian cuisines at the homes of Vietnam, China, Thailand, Cambodia, Vietnam, Singapore, Philippines, Myanmar, and India. Shabtay is one of the few chefs in the world that actually travels and stay in the villages of Asia. He loves staying with the families spending nights at their home villages and is getting his training from the villages senior homemakers. Shabtay then travels back to Europe and brings his adventurer experience to his patrons’ plates. People from all over the world are traveling to Shabtay’ restaurants to experience the equine atmosphere, which surrounds the dinners from the moment they walk through the doors. The authenticity of the music, the restaurant's layout, the species and the exact flavors take the dinners into a culinary voyage of French cuisine fashioned into Asian flavors.

The Shahaf Shabtay experience[edit]

BIB Michelin Star[edit]

Shabtay’s unique approach and his dedication to perfect execution earned him a Michelin BIB Gourmand for his performance as the executive chef of the Aureole - fusion restaurant in Prague years: 2009, 2011,2012,2013,2014, and 2015

Carrier[edit]

Early cooking carrier[edit]

1998- 1999 - France Shabtay had studied at the famous École Grégoire-Ferrandi culinary school of cooking Arts in Paris, France. He spends his internship year, at the Odeon and Nobu in New York, and in the evenings he learned to bake at the chef Daniel Bouley Bakery. 2001- Thailand Studied at the Thai Cooking School, Soi 12, Bangkok, Thailand. In New-York Shabtay came to the realization that the world is ready for an Asian cuisine experience, but also that at that stage it has to be presented in a familiar manner. That is when Shabtay has started his journey into the source places of the Asian kitchen. 2001-2004- Amsterdam Shabtay had opened Vakzuid French Asian kitchen Restaurant in Amsterdam, Holland based at the National Football Stadium. Shabtay had also contributed from his experience to the opening of the ‘Fishes restaurant’ and the Indonesian ‘Cafe Tabac’ both based in Amsterdam.

2004-2005 - Mumbai[edit]

A year of a dream come true for Shabtay when he created and opened the two restaurants under the name Zenzi in Mumbai. Zenzi was one of the world pioneer in Fusion Indonesian French kitchen. Shabtai fresh idea has landed him the prestigious award as the best foreign chef in Mumbai for 2004.

2005-2006 - Prague[edit]

Shabtay had opened and ran ‘120 days’ Restaurant, Prague, Czech Rep. this was a freestyle kitchen with the concept and origin of food changing every 120 days.

2006-2007 - Tel Aviv[edit]

Shabtay had continued to spread his culinary philosophy this time in Israel where he created, opened and ran two restaurants under the name ‘Minna Tomei’ in Tel Aviv. The concept of this restaurant was based on Asian Street food. At that time Shabtay had also re-designed, opened and ran three restaurants as a consultant in Belgrade, Serbia. These restaurants are called ‘Kamalon’, ‘Ginger’ and ‘Diva’, the concept for these restaurants was a fusion of Italian, Asian and French respectively

2007-2015 - Prague[edit]

Shabtay presents his fusion culinary experience to central Europe and his flagship restaurant ‘SASAZU’ Prague at the Czech Republic was awarded a BIB Michelin Star restaurant. This was the first time Shabtay have received an international acknowledgment of his unique cuisine philosophy. Soon he opens the ‘SASAZU’ Rhodes, Greece and ‘SASAZU Bucharest, Romania. The concepts associated with these restaurants are South East Asian with a French base. Shabtay had developed the Asian experience and started to assist the restaurants’ visitors with culinary classes and exposed them to the Asian experience and the cuisines backgrounds by imbedding yoga and well-being philosophies into his cooking.

Shabtay had also consulted, developed, set up the opening of the ‘SASAZU’ Myanmar and the set up ‘Bago’ Cambodia
