Ernest Ng (born 5th May 1955) is a Brew Master and the owner of RedDot Brewhouse, Singapore's first locally independent, commercial microbrewery.
Early Life[edit]
Growing up along Singapore River in the 1960’s, Ernest witnessed the great changing that the 3 Quays: Robertson Quay, Clarke Quay and Boat Quay, undergone in the last 50 years in tandem with changing of Singapore. Boat Quay holds special meaning for Ernest. He used to visit Boat Quay to watch the junk, bumboat and tongkang that berth along Boat Quay to unload its cargo. Perhaps it was the childhood memories that he now set up RedDot BrewHouse at Boat Quay. He believes Boat Quay’s past was intertwined with Singapore’s History with the fast pace changes in the past decades and now set against the backdrop of the vibrant CBD. It is a contrast of modern Singapore and the past era of Singapore. With high tourist visit to MBS and hotels in the vicinity, Boat Quay’s heritage could serve as a “hinterland” for food and entertainment and heritage tour.
Career[edit]
Prior to RedDot BrewHouse, he operated a family-run construction company for 18 years with his business and life partner - Mui Lee. The company was involved in conservation projects which won Architectural Heritage Awards presented by Urban Redevelopment Authority Singapore in 2006 and 2007. His experience in the building industry coupled with his involvement in conservation projects helped him tremendously in the conservation and renovation of the pre- war historic building in Dempsey outlet for RedDot Brewhouse as well as the nostalgic Boat Quay outlet.
In the year 1997, Ernest Ng was on a family holiday at Kruger National Park when he chanced upon 2 South African soldiers who introduced him to home-brew beers. It had piqued his interest in beer and thus, led him on a self-learning journey of beer brewing and then setting up his own microbrewery. Right in the comfort of his own home, he had constructed a shed to try out his home-brew recipes. Up till today, the shed still stands.
His combined knowledge of construction has helped him tremendously with the construction of the brewery itself and the brewery tanks which were designed by him.
