- Bent River Camembert is an artisan cheese made with pasteurized cows milk. It is a type of camembert cheese[1], it differs from traditional camembert in a number of ways, such as the fact that it is only made with milk produced from Minnesotan cows, also it is only produced in Mankato, Minnesota.[2] It is moist, soft, creamy, surface-ripened cheese. It is mild and creamy when it is young, but as it reaches maturity it becomes funky and pungent. It is named after the bend in the Minnesota River.[3] The cheese has three "parts" the bloomy rind, the cream layer, and an unripened "button" at its center, as the cheese matures the unripened center will ripen and become part of the cream layer.[3] Bent river camembert won a Good Foods award and was a two time winner of American Cheese Society honors.[4]
