Rose Previte is the owner of two of Washington DC’s acclaimed restaurants, Compass Rose and the Michelin-starred, Maydan. Raised in a food-loving Sicilian-Lebanese family in Ohio, Rose’s first food job was in her mother’s Middle Eastern catering business and restaurant. She later spent more than a decade working in bars and restaurants while pursuing a master’s degree in Public Policy from George Mason University.
The inspiration for her first restaurant, Compass Rose, came from nearly three years of traveling to more than 30 countries while she lived in Russia with her husband, David Greene, who was posted there as a correspondent for NPR. The pioneering restaurant dedicated to global flavors opened in 2014 and was named the 2017 RAMMY award-winner for Best Casual Restaurant; appeared on every best restaurant list in DC; and garnered national recognition from esteemed outlets including The New York Times, The Los Angeles Times, Food & Wine, and Bon Appetit.
In 2017, Rose opened Maydān, tucked away in an alley in DC’s U Street neighborhood. Rose’s second restaurant is a tribute to her mother’s Lebanese heritage but serves dishes from Morocco, Tunisia, Turkey, Georgia, and Lebanon over an open-fire hearth.
She and her team immersed themselves in local culinary traditions, techniques, and ingredients during the summer of 2016 when they spent three weeks traveling to the region. Maydān quickly earned coveted spots on many national “Best New Restaurants in America” lists including Bon Appetit, Food & Wine, GQ, and Eater; was named a James Beard Award Semifinalist for Best New Restaurant in 2018; and earned a Michelin Star in 2019.
In 2022, Rose opened Kirby Club, an ode to her grandparents who founded A Lebanese-American Social Club by the same name in 1933. Kirby Club 2.0 tells their stories- and the stories of many Middle Eastern Americans- through food.
When she’s not greeting guests at one of her restaurants, Rose stays busy. She was the host of local PBS affiliate WETA’s “Check, Please! DC,” where she gave viewers an unfiltered look at the local restaurant scene. She has attracted recognition as a prominent and progressive small business entrepreneur, including Washingtonian’s “40 Under 40” in 2017 as a local figure who is shaping the community and on its “Most Powerful Women in Washington” in 2019 as one of the area’s most influential female leaders. She was also named "Restaurateur of the Year" by the Restaurant Association of Metropolitan Washington in 2023. Rose released her debut cookbook in November of 2023, titled Maydan, which explores bold flavors, accessible, shareable recipes, and overlapping foodways, spanning from Lebanon to Morocco, from Oman to the Republic of Georgia.
