Yatimcha (Azeri:یتیمچه) is a native food in azeri regions of Iran and also Azerbaijan country.[1]
The cooking method is slightly different in multifarious regions such as Ardabil or Tabriz.
This food is made from eggplant, tomato, onion, and potato.[1]
Meaning of "Yatimcha" in azeri language is "without parents"!
And it comes from this matter that there is no meat in food.[2]
We fry the potatoes separately and add them to the other ingredients that are being peeled and cooked. After heating the ingredients with black pepper and salt, the food is ready. You can also use pumpkin instead of eggplant. Yatimcha is very similar to the French dish of ratatouille.
