"This edition was contested between Everton and Coventry City at Wembley" - how about Wembley Stadium for full clarity?
"on Saturday 1 August 1987." - not sure the day is approrpiate in this context
"Everton had won the 1986–87 Football League and Coventry had won the 1987 FA Cup Final to qualify for the season opener for the first time." - repetition of "had won"
"It was played two weeks before the new league season kicked off." - how about replacing the text in bold with a more formal phrase such as began or commenced?
Can the second paragraph be expanded more?

Wikilink Wembley Stadium to the appropriate article only on the first mention not on any other subsequent mention
"Coventry City's side included Scottish international David Speedie who had signed for them during the summer" - might want to avoid using seasons where possible per MOS:SEASON
Try to be consistent in how Coventry City is referred as in some sentences they are referred to as "Coventry" or "Coventry City"

Wikilink pass, cross, header and corner to the relevant articles for non-football readers only on the first mention
"Speedie missed an opportunity to score after a pass from Greg Downs, Mimms saving his strike with his toe." - think there might be a word missing from the start of the second portion of this text

The details section might be better off with the addition of references to verify the accuracy of the information contained herein
