Campden Tablets in Wort?

I don't know of any source that suggests using campden tablets in beer wort, and I think this portion of the text needs a citation, or else clarification that it applies only to cider wort.philosofool 00:44, 25 January 2007 (UTC)[reply]

I've never seen any reference to sulfiting beer wort either; my thought would be that it's unnecessary at best, unless the object was to remove Chloramines--I'm curious about that however, because a co worker of mine who has experience in water treatment is of the opinion that nothing but charcoal filtering will take chloramine out of water. Some citations here would be good; I've requested such on the metabisulfite articles but I don't know that anything's come through. -MalkavianX 15:24, 30 January 2007 (UTC)[reply]

This topic has been discussed ad nauseum on HomebrewDigest. Their achives (hbd.org) show that one AJ deLange measured the effectiveness of one camden/20 gal several yerws ago and this was quite successful. metabisulfite in beer wort are not for infection control and not for chloramine control, but rather for their strong and general anti-oxidant effect. Some discussions, (including professional brewing journals) suggest the use of metabisulfite or other sources of SO2in the mash to prevent mash oxidation which is believed to result in a particularly obnoxious form of beer staling damage. stevea

Home brewing forums are full of absolute nonsense. One idea floating around is the spontaneous formation of organochlorides in beer wort, particularly PCBs, as phenols are found in barley extract. Tap water contains chlorine gas and other chlorides, hence it must not be used for beer production. Campden tabs will remove all chlorides, including the table salt they sometimes add, to make the beer PCB free. (It must be a chlorine-free type of table salt, I guess.) Was probably some marketing guff from one of the makers of iodine-based sanitizers.
