Some notes

Match begins when the Referee blows maybe accurate regarding time begins to run, correct begin of the match is when the kick-off is done (ball has to move considerably). Even there maybe only not a second elaps between Referee's whistling and the well-done kick-off - but it may occure that the kick-off is delayed by unexpected circumstances (kick taker or another player of any team corrects his equipment a.s.o.). At the same time (or simultaneously with the Referee's whistle) could occure a misconduct or an infringement (or misconduct or infringement is/are reason for the delay): However, when an infringement or misconduct happen before the kick-off is done in a correct matter, the Referee has to caution the player/s. If there a player (or more) is (are) dismissed, he (they) could be substituted. This means that both teams can start with 11 players, and both teams can use the maximum of substitutes. The only restriction is that a team isn't allowed to change the number of substitutes (in the most parts there the maximum of substitutes are five players; if one player is sent off there are remains four a.s.o.). But if the kick-off was done, there a team (or both) has (have) to play in minority.

In the past, very often kick-offs were made in a manner that one player kicked the ball a little towards and then a team-mate kicked it back. Since now laws of game allowing to kick into all directions you can see nearly only the method of kicking back. I think teams would have more advantage by kicks forwards (maybe such actions have to be trained). Theoretically, a goalkeeper may take the kick-off (like he is allowed to do in all cases of re-starts). If a kick-off moves into the own goal without being touched by an other player a corner-kick is to award to the opponent team (maybe theoretical too). If you like fictions there could a second touch only be punished with an indirect free kick if (after goalkeeper's creating the kick-off) the goalkeeper would fetch the ball with his hands in his penalty area...

But it is no fiction that the Referee has no need to allow a kick-off when there is half-time or end of the match.
