I think it is very optimistic to think there was an entire street occupied with processing bear skins, another for wolf skins, one for roedeer and (after mistranslating 'hart') one for red deer. Holland simply is not a good bear habitats, so there won't have been any within reasonable distance of Amsterdam and definitely not in commercial quantities.
