The article states that Santos is the plural of Santo in Italian, however, that is not true, since the plural of Santo in Italian is Santi. Besides that, the form Santos is not used in Italian surnames unless we count De Santo, Del Santo, Santi, De Santis and similar variations. However there are other articles about that surnames for example https://en.wikipedia.org/wiki/Santi and https://en.wikipedia.org/wiki/DeSantis And last but not least "santos" is not the plural of "saint" in French either.
