Big Business in The Industry

Utilizing global trade routes to transport food has been around for many years and many people relied on locally grown food until about 100 years ago. The refrigerated railway car was invented in the 19th century and it allowed people to transport produce and other grown foods which also allowed people from different areas to receive different types of seasonal foods. During the seasons, many foods are not able to be grown because of the weather so a way to transport these items is very helpful. Businesses utilizing transportation of food grew very quickly. Much of the world receives their food from a handful of top companies and these top companies in the meat and railroad industries controlled so much of the market that the government had to step in and put new antitrust laws into effect.[1]

Local Food Trend

As our complex food system has become more and more globalized, a lot more people are wanting to be aware of where their food comes from. The terms “local” or "locally grown" have been something that people have been using and it has also played a big part in marketing for businesses. Many restaurants around the country use the term local in their advertising and also have chefs utilize locally grown foods in their menus. "On the farm side, the USDA estimates that more than 167,000 farms sold food to local markets in 2015, resulting in $8.7 billion in revenue." [1]
