Khanom Krok Baitoey

Khanom Krok Baitoey or Pandan sweetmeat (Thai:ขนมครกใบเตย), also called “Kanom Kueh”(Thai:ขนมเขียว) or “Khanom Krok Singapore” is a Thai dessert which is very popular in Thailand. The reason why people call it Singapore snack because in the past, people called the Cassava flour as Singapore flour. At present, this dessert can be found in various areas in Bangkok. Khanom Krok is a dessert which looks like a small muffin made with flour, coconut, sugar, and pandan leaf extract which gives a delight green colour. [1] The identity of this snack is softness and chewiness with a light fragrance of pandan especially when eaten at once after cooking. [2]

Equipment Cast iron dessert mold with a stargooseberry shape, dipper (for dropping the flour), Stainless steel tray and sieve

Ingredients All purpose flour, cassava starch, eggs, coconut milk, milk, pandan, baking powder, salt, sugar and butter

Process of making Khanom Krok Baitoey

1. Mix all flour with baking powder. Then add sugar and salt and mixing it together

2. Put an egg, coconut milk and pandan and mix it together thoroughly until it becomes well-blended.

3. Put the cast iron dessert mold on the gas stove with a low heat and pour little oil in the mold then add the flour into it

4. Close the lid and wait until the dessert warm. Remove the dessert out of the shove. [3]
