This is a great start. I think it was a smart move to add information regarding the Amaranth species. For future edits, I would recommend adding hyperlinks to the Amaranth and Aztec pages. Adding an image of the Amaranth might also be helpful.

I would also consider deleting the biomedical applications section because it seemed to be based on Amaranth species in general and not the Amaranth grain. Jforson (talk) 13:19, 6 April 2017 (UTC)
