Avoiding original research

Wikipedia does not use original research. The Youtube video you cited for Mortal Kombat 11 does not actually say what software was used -- it is just your assessment that it's the Unreal 4 engine. The professionally-published sources cited say that it uses a heavily modified version of the Unreal 3 engine. You would need to cite similar professionally-published mainstream journalistic sources (or else an official statement from the developers) that explicitly says "Unreal 4."
