Cơm rượu vs rượu nếp[edit]

These 2 dishes are not alike. Cơm rượu is made from glutinous rice that is milled (thus white), cooked in water, rolled into balls then fermented whereas rượu nếp is made from glutinous paddy (hull and all, thus brown) which is steamed and then fermented. Cơm rượu is spongy and soft with the rice all compressed, no longer identifiable as rice. Rượu nếp is nutty with a slight crunch. Each grain of rice is still intact and easily separated. They are quite different in terms of ingredients, preparation, taste and texture. Neither resemble the Chinese version if the photo on that site portray the final product.
