The classic Carpaccio is of beef - various joints may be used but typically the most tender and expensive cuts from the less used muscles are favoured

Looking at the lede - isn't it the case that the original carpaccio was always beef and that we should say "originally made with beef but now made with other raw meats"? Seems very odd. AdventurousMe (talk) 07:26, 12 May 2015 (UTC)[reply]
