I can't see this ever being more than a stub, it really belongs as a recipe in the Wikibooks Cookbook. Incidentally, my copy of Escoffier gives its name as Pommes dauphine, so if it does get moved, it should probably do so under that name. FlagSteward 11:28, 26 September 2007 (UTC)[reply]
