Food is any substance consumed by an organism for nutritional support. Food is usually of plant, animal, or fungal origin and contains essential nutrients such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth. Different species of animals have different feeding behaviours that satisfy the needs of their metabolisms and have evolved to fill a specific ecological niche within specific geographical contexts.
Omnivorous humans are highly adaptable and have adapted to obtain food in many different ecosystems. Humans generally use cooking to prepare food for consumption. The majority of the food energy required is supplied by the industrial food industry, which produces food through intensive agriculture and distributes it through complex food processing and food distribution systems. This system of conventional agriculture relies heavily on fossil fuels, which means that the food and agricultural systems are one of the major contributors to climate change, accounting for as much as 37% of total greenhouse gas emissions. Cooking, also known as cookery or professionally as the culinary arts, is the art, science and craft of using heat to make food more palatable, digestible, nutritious, or safe. Cooking techniques and ingredients vary widely, from grilling food over an open fire, to using electric stoves, to baking in various types of ovens, reflecting local conditions. Cooking is an aspect of all human societies and a cultural universal.
Preparing food with heat or fire is an activity unique to humans. Archeological evidence of cooking fires from at least 300,000 years ago exists, but some estimate that humans started cooking up to 2 million years ago.
The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling of water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served. (Full article...)
Glamorgan sausage (Welsh: Selsig Morgannwg) is a traditional Welsh vegetarian sausage for which the main ingredients are cheese (usually Caerphilly), leeks and breadcrumbs. It is named after the historic county of Glamorgan in Wales.
The earliest published mention of the dish is from the 1850s in the book Wild Wales by George Borrow, although earlier records in the Glamorgan Archives show a version which contains pork. The modern vegetarian version became popular during the Second World War when meat was harder to come by, and is now mass-produced by at least two companies. Variations include swapping the leeks for onions, as well as different herbs and spices, and various types of cheese. (Full article...)

A halal snack pack is an Australian fast food dish, which consists of halal-certified doner kebab meat (lamb, chicken, or beef) and chips. It also includes different kinds of sauces, usually chilli, garlic, and barbecue, whilst yoghurt or yoghurt sauce, cheese, jalapeño peppers and tabbouleh are common additions. While the snack pack was traditionally served in a styrofoam container, it is now most commonly served in moulded pulp or cardboard containers, as most Australian states have banned single-use plastic packaging. The snack pack has been described as a staple takeaway dish of kebab shops in Australia.
Some Australian restaurant menus refer to the dish as a "snack pack", "snack box" or "mixed plate". The name of the dish was chosen by the Macquarie Dictionary as the "People's Choice Word of the Year" for 2016. In Western Australia, the dish is often called a "meat box", and in Adelaide it is known as an "AB". The dish also exists in New Zealand, where it is known as meat on chips. Another notable similar phenomena is the Dutch kapsalon. (Full article...)Selected cuisine -
Polish cuisine (Polish: kuchnia polska) is a style of food preparation originating in and widely popular in Poland. Due to Poland's history, Polish cuisine has evolved over the centuries to be very eclectic, and shares many similarities with other national cuisines. Polish cooking in other cultures is often referred to as à la polonaise.
Polish cuisine is rich in meat, especially pork, chicken and game, in addition to a wide range of vegetables, spices, fungi and mushrooms, and herbs. It is also characterised by its use of various kinds of pasta, cereals, kasha and pulses. In general, Polish cuisine makes extensive use of butter, cream, eggs, and seasoning. Traditional dishes often demand lengthy preparation. Many Poles take time to serve and enjoy their festive meals, especially Christmas Eve dinner (Wigilia) on December 24, or Easter breakfast, both of which could take several days to prepare. Olive oil is a liquid fat obtained by pressing whole olives, the fruit of Olea europaea, a traditional tree crop of the Mediterranean Basin, and extracting the oil.
It is commonly used in cooking for frying foods or as a salad dressing. It can also be found in some cosmetics, pharmaceuticals, soaps, and fuels for traditional oil lamps. It also has additional uses in some religions. The olive is one of three core food plants in Mediterranean cuisine, together with wheat and grapes. Olive trees have been grown around the Mediterranean since the 8th millennium BC. (Full article...)

Roux (/ruː/) is a mixture of flour and fat cooked together and used to thicken sauces. Roux is typically made from equal parts of flour and fat by weight. The flour is added to the melted fat or oil on the stove top, blended until smooth, and cooked to the desired level of brownness. A roux can be white, blond (darker) or brown. Butter, bacon drippings or lard are commonly used fats. Roux is used as a thickening agent for gravy, sauces, soups and stews. It provides the base for a dish, and other ingredients are added after the roux is complete. (Full article...)
New Paltz station is a former train station in the village of New Paltz in Ulster County, New York. The building was the first of two railroad stations constructed in the town of New Paltz, and it is the only former Wallkill Valley Railroad station standing at its original location.
After a lengthy public debate over whether to place the station to the east or west of the Wallkill River, it was built in 1870 on the east bank, within the village of New Paltz. The rail line was formally opened during a large ceremony on December 20, 1870. A decade later the station had become a popular departure point for the Mohonk Mountain House by many vacationers, including two U.S. presidents. In the late 19th century, over a dozen stagecoaches ran between the station and Mohonk daily. (Full article...)Selected image –

Jane Grigson
B. March 13, 1928 – d. March 12, 1990
Jane Grigson (born Heather Mabel Jane McIntire; 13 March 1928 – 12 March 1990) was an English cookery writer. In the latter part of the 20th century she was the author of the food column for The Observer and wrote numerous books about European cuisines and traditional British dishes. Her work proved influential in promoting British food.
Born in Gloucestershire, Grigson was raised in Sunderland, North East England, before studying at Newnham College, Cambridge. In 1953 she became an editorial assistant at the publishing company Rainbird, McLean, where she was the research assistant for the poet and writer Geoffrey Grigson. They soon began a relationship which lasted until his death in 1985; they had one daughter, Sophie. Jane worked as a translator of Italian works, and co-wrote books with her husband before writing Charcuterie and French Pork Cookery in 1967. The book was well received and, on its strength, Grigson gained her position at The Observer after a recommendation by the food writer Elizabeth David. (Full article...)
